Handmade in the traditional Champagne way, this Blanc de Blancs has aromas of grapefruit, warm bread cooking and citrus blossom. The palate is dry, crisp and clean with lemon, shortbread and a hint of honey.
Description
This Blanc-de-blancs cuvee is made from 100% Chardonnay grapes selected from our premium cool climate vineyard at Mount Compass, and hand made using the traditional Champagne method of re-fermenting in the bottle where it has matured on lees for 2.5 years.
Aromas of grapefruit, warm bread cooking and citrus blossom. The palate is dry, crisp and clean with lemon, shortbread and a hint of honey.
Sealed with a crown seal to retain quality.

Vintage Report
Grown in the Southern Fleurieu in glacial sands over ironstone, on a vertically shoot positioned trellis with a north-west aspect, 300m above sea level.
Harvested in late February 2012.
Winemaking
Handmade in the traditional Champagne way, using 100% Chardonnay grapes matured on lees for 2 years in the bottle.
